Description of Duties/Essential Functions

Manages all phases of a comprehensive food program for the facility. Develops, revises and implements food service policies and procedures for the food service program operation in accordance of regulations with Public Health, IICFA, and agency policy. Supervises staff, assigns work, approves time off, establishes goals and objectives. Observes the preparation, serving and storing of food to assure proper health, sanitation and safety standards are met. Develops master menus for general, therapeutic and special diets. Prepares all documents for procurement of food, beverages, supplies, equipment and other department needs. Confers with family, facility medical and nursing staff regarding dietary needs of patients. Interprets diet prescriptions and plans and prepares modified and therapeutic diets and menus. Reviews inventory records, delivery schedules, food service reports. Assesses the quality of products by taste and examination. Is accountable for state property within assigned division/section as determined by the Department’s policy. Maintain inventory and complete all required forms for property control.

Minimum Requirements

Requires knowledge, skills and mental development equivalent to the completion of four years of college with courses in dietetics. Requires current Certified Dietary Manager Certificate (CDM). Requires two years professional experience in large scale food service program. Requires extensive knowledge of the Department of Public Health food service standards and regulations concerning the sanitary preparation, serving and storage of food in relation to large scale food service. Requires thorough knowledge of food service management with emphasis on food costs, ordering procedures, and fiscal accounting methods. Requires extensive knowledge of nutritional and therapeutic meals for the elderly and the ability to direct staff in the preparation and serving of such meals. Prefers licensure as a Licensed Dietitian/Nutritionist from the State of Illinois, Department of Financial and Professional Regulation. Requires ability speak, read, and write in English language.

Anticipated salary range: $55,000-$65,000
Merit Comp salary range: $37,792-$117,180
