- Open and prepare each shift for optimum performance, preparing service floor plan, confirming and plotting dinner reservations paying special attention to guest notes.
- Supervise opening of the dining room and bar ensuring optimum staffing and set up for the shift at hand.
- Align dining room and bar service team with the kitchen team through daily pre-meal meeting discussing reservations, dinner specials, beverage program notes and points of service notes.
- Command dinner service overseeing greeting, seating, service and departure of all guests.
- Anticipate service shortcomings and realign assets to relieve pressure. Apply guest retention when necessary.
- Handle server and bar check-outs ensuring proper payment for daily sales. Prepare daily sales report to calculate tip distributions. Prepare and reconcile daily cash deposits. Settle credit card batch daily.
- Securely close the restaurant ensuring cleanliness, safety and preparation for the following business day.
- Directly supervise and schedule a team of servers, bartenders, server assistants and hosts.
- Directly responsible for Labor and beverage cost control.
- Produce monthly China/Glass/Silverware inventory count.
- Reports to Assistant General Manager and General Manager.
