Summary: The Vice President, Food & Beverage is responsible for the overall business strategic planning process and execution ensuring foundational best practices and creating an operational environment that develops and delivers creative and best-of-breed food and beverage experiences for guests, while maintaining the creativity and independence of each property and skillfully making the best use of resources. The role leads a team of corporate food and beverage staff to support resort level operations in delivering the mission by providing a broad range of food and beverage solutions to satisfy all meal periods and occasions for every family, thereby maximizing revenue and profitability.
Responsibilities:
  • Develops and implements food and beverage strategic plan comprised of: Product and Presentation Elevation, Pack Engagement and Process and Outlet Optimization.
  • Monitoring and/or overseeing budget preparation for property outlets and capital plans; participating in procurement programs; projecting annual food, labor and other costs and monitoring financial results
  • Collaborating with operations leaders to identify synergies and optimize profit, labor cost, food cost and menu pricing opportunities that maintain margin standards while increasing capture and quality; taking corrective action as necessary to assure that financial goals are met
  • Representing the food and beverage discipline as a corporate line of business leader in weekly and monthly performance reviews and developing action plans and collaborating with the field to execute.
  • Utilizing consumer trend data together with guest research to determine appropriate food and beverage platforms, venues, and offerings to rapidly scale the food & beverage side of the business
  • Collaborating with property General Managers, Executive Chefs, Food and Beverage Directors, and other leaders to determine a winning approach to food and beverage offering selections per property and identifying themes that work across all properties
  • Determining and developing appropriate branded partnerships; identifying and developing local culinary partners per location as needed
  • Identifying those occasions when outsourcing food and beverage is most appropriate, acting as liaison and managing that relationship
  • Collaborating with other senior executives to develop and implement promotional, marketing, and special events to generate awareness of and visitation to food and beverage outlets
  • Developing and maintaining standards that promote excellence and fostering a culture that supports the culinary team in a manner that produces results that are consistently rated as outstanding by guests and rated as “best-of” by external reviewers
  • Ensuring proper selection and development of talented food & beverage management and implementing effective succession plans for growth to provide pipeline, depth and bench for all critical positions; ensuring a work environment that fosters pack members and management engagement and retention
  • Instilling a culture of continuous improvement and fast-paced execution within the department
  • Ensuring effective and timely training; identifying and sharing best practices

Required Qualifications:
  • Bachelor’s degree in Business, Hospitality, or a related field
  • At least 10 years of food and beverage experience or equivalent
  • Prior senior-level leadership experience with P&L responsibility in a high growth multi-unit food service, restaurant, hospitality and/or entertainment company
  • Experience opening new food and beverage outlets and properties in a multi-unit environment
  • High impact, dynamic, visionary leadership skills, with a record of achieving results individually and through others
  • Strategic thinking ability with proven ability to achieve plans
  • Experience “re-concepting” existing businesses as well as growing new concepts
  • Excellent communication skills, ability to translate ongoing strategic market vision into sound operating business plans and processes
  • Strong influencing and relationship skills
  • Passionate customer service and “guest experience” orientation with an affinity for family brands
Desired Qualifications:
  • Broad knowledge and experience in the restaurant/food service industry, along with strong business development, corporate strategy and marketing acumen
  • Experience developing recruiting relationships with hospitality and culinary schools and programs
